It's Madness Time! Part 2



Continuing on the March Madness theme this week.  I have a sweet tooth for ice cream and have spent a lot of time finding the perfect ice cream base.  Nothing says dessert to me than mint chocolate chip ice cream.  It’s great on a hot day or wintry day.  And, it’s great for celebrating your team advancing through their bracket or for drowning sorrows if your bracket is busted.


Over the years, I’ve tried many variations of mint ice cream.  Ones that use mint flavoring.  Ones that are green from food coloring. Ones with chunks of chocolate.  And, ones with mini chips.  I’ve found the best-tasting mint ice cream uses fresh mint to flavor the ice cream and the best “chips” are more like chocolate shavings.


The recipe I’m sharing is the result of my many attempts to create what is now my favorite mint chocolate chip ice cream.  It takes a bit more time than normal ice cream but is totally worth it.
