Strawberry Shortcakes



Ever have those days when you want something sweet but also want something you haven’t had in a long time?  How about Strawberry Shortcakes?


You might be nervous about making the biscuits and think “maybe pre-made would be okay.”  As you’ll see in the recipe below, making homemade biscuits are really easy and taste way better than the pre-made stuff from the store.  


It’s true that making biscuits is kind of like making pie crust, but it is not as fussy and tough to get wrong.  


The three key things to remember are:

  • Keep the dairy ingredients cold until you need them

  • Use your hands to cut the butter into the flour

  • Don’t overwork the dough


Following the steps in the recipe below, you’ll get fluffy biscuits great for dessert (and for breakfast, if you have any left over).


Note:  This recipe is not a buttery-rich biscuit and therefore, will not brown when you bake them.
