Beet Salad

You may think of beets as more of a fall/winter vegetable, but they are available in summer months at the farmers markets. I grow them from early summer through fall in my garden, as well. I recently pulled my first set of beets for the season!

I am excited to make my favorite roasted beet salad for lunch today. I love the roasted flavor of beets mixed with a tangy vinaigrette and creamy goat cheese. It's a great addition to use fresh arugula from the garden or market in this summer version.
